Description: Inspired from Gerry's grill. we celebrated my last bday in this resto and ordered this dish. On our noche buena, mu kuya mac made a special request for this. it was just my innovation of my kare-kare, i just use seafoods (tahong, shrimps, squid, fish fillet) instead of using ox tripe/pata.
Ingredients: Any combination of seafoods like tahong, clams, shrimps, squid, fish fillet, tuna- I dont recommend crabs kasi feeling ko, pang gata lang un. la lang. lawl XD) garlic onion 1 cup of peanut butter 1 pack of Mama Sita's Kare-Kare flavored mix. 2 cups of seafood broth 2 tbsp of bagoong string beans/ baguio beans puso ng saging eggplant 1 tbsp of annato seeds soaked in water
Directions: *Soak annato/asuete seeds in water, leave it until water turned orange. *Prepare for your seafood. Clean and wash tahong, clams, squid well. For tahong and clams, boil them until shells are opened. Set aside the broth. For shrimps, take off its shell, leave the head and tail part. For squid, take off its skin (transparent film), cut horizontally in 3 parts, include its tentacles without the head. For tuna/fish fillet, cut into cubes. *Saute garlic and onions. Add the broth, peanut butter and puso ng saging. Boil the puso ng saging until soft and tender. (If u have put, too much of this, it would take you half an hour) *Mix the Mama Sita with a one cup water in the casserole. *Add the annato sauce, bagoong ang the vegetables, simmer until veggies are cooked. *Add the shrimps and squid, cook it until shrimps turned orange. do not overcook it. *Lastly, add the boiled tahong. Mix them all together, simmer once. Serve while hot!
